Superbowl Sunday + Mexican Skillet dip for a crowd

Superbowl Sunday is just around the corner.
Who you got in the big game? Broncos? Seahawks? It’s a toss up for me as I love both Peyton Manning and Russell Wilson, so I guess either outcome will be fine with me. And you, maybe like me, are more concerned with what you will serve all those grubby little football fans during the big game. {Okay, so maybe they are not grubby, but you understand.}
Well, I have a quick, super easy, and crowd-pleasing solution that will feed everyone’s craving for dips and chips without a lot of effort or a lot of dough.

My Mom’s Mexican Skillet Dip

Seriously, my mom has been making this for years and my family just gobbles it right up. I even requested it at a few birthdays as a child. You see, I have loved Mexican food even from the womb.
If you can even call this a recipe, here we go…

What you will need:

  • 2 lbs of ground beef, lean {I use 90/10 or 85/15}
  • 1-2 large can(s) of black refried beans
  • 2 packages taco seasoning
  • 3 cups grated sharp cheddar cheese
  • Tortilla chips
  • Optional toppings: sour cream, jalapenos, cilantro, avacado, lime wedges {but why these would be optional is beyond me…}

Okay, so here is the low-down…

  1. Brown off ground beef until nicely browned and crumbly. Stir in 1 package of taco seasoning until all the beef is fully coated with the delicious taco flavoring.
  2. Combine the black refried beans with the other package of taco seasoning.
  3. In the bottom of a greased electric skillet*, layer the seasoned ground beef, then slather with the seasoned refried beans, and finally top with grated cheese. Close the lid, turn on warm, and keep warm and bubbly until guests arrive.

Lay that cheese on thick! If it strings from the pan to the plate, you have done it right. 🙂

4.   Serve warm with tortilla chips and assorted toppings.

Y’all, it is so simple and so very good. And who doesn’t love a messy, Mexican dip on gameday? I have yet to meet them.

*Note: if you do not have an electric skillet, prepare it in a cast iron skillet or deep dish pie plate and pop in the oven at 350 until it is  hot and bubbly and warmed all the way through and cheese is melted. Probably about 15-20 minutes.

 

Don’t want to use prepared taco seasoning packets or simply don’t have any on hand? Here is a mix recipe that I enjoy:

  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp cumin
  • 3/4 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/4 tsp ground black pepper
  • 1/8 tsp cayenne pepper {or more if you can take the heat…}

Desires of the heart

My small group recently began a new study, Discerning the Voice of God by Priscilla Shirer. It speaks of God’s will for our lives, our conscience vs. His voice, the Holy Spirit in us, and whether or not we are truly listening to Him and for Him.

Wow! It is rocking my boat.

And my boat needed some rocking.

Last night, as I was reading through, I came across this. A familiar verse.

“Delight yourself in the Lord; and He will give you the desires of your hear.”

— Psalms 37:4

In discussing this verse, Priscilla’s commentary reads:

“This doesn’t mean He is necessarily giving you what you want, but rather that He is in the process of transforming your soul to desire what He wants.”

Oh my! Don’t miss that dear ones.

Then she goes on…

“He is actually give you His desires, and the more you delight yourself in Him, His Word, and His will, the more you can expect to see His desires implanted within you. We don’t have to be afraid of what God’s will might be. We can just relax in Him, knowing He will speak clearly, order our steps, and cause us to desire what brings Him pleasure.”

Read His truth in Philippians 2:13 (NLT) —

“For God is working in you, give you the desire and the power to do what pleases Him.”

His work in me will cause me to desire His will for my life. He will not only command, but also compel me, my mind, my heart, my will, and my emotions to be transformed and align with Him. Then, and only then, will He map out the plans He has for me. And then, He walks with me.

I hope that sinks in and blesses your heart today, as it did mine.
