Still Counting…

One of my favorite songs on the radio right now is One Republic’s Counting Stars. It’s catchy, incredibly upbeat, and I love Ryan Tedder, their lead singer, for his unique pitch and rich, tenor voice-quality. Could listen to him all day.

Plus ladies, he isn’t exactly hard to look at either.

Just saying.

And the chorus goes something like this—

“Lately I’ve been, I’ve been losing sleep
Dreaming about the things that we could be.
But baby, I been, I been prayin’ hard
Said no more counting dollars,
We’ll be counting stars
Yeah! We’ll be counting stars.”

Amazing how my God uses pop songs to speak to me.He uses amazing things, ordinary things, and everyday things to speak to us.

Anyways, this song is laden with religious imagery and symbology- verbiage like “seek it out and ye shall find” and “I been prayin’ hard”- not sure if One Republic meant for it to be, but it speaks to me beyond jus the catchy phrasing and toe-tapping rhythm. The idea of counting stars, this vastless, boundless entity is impossible to do. As is His love for you, for me.




That is why I am counting blessings. To remind me of His infinite thoughts towards me. To show me how insignificant and tiny I am in this big, huge, galactic universe, but how big I am to Him. To keep at the forefront of my mind, that He loves me. Oh, how He loves me!

Counting blessings, like stars.





Good news. An instant spirit- lifter!  

The way DatDat looks at Nana- so broken, but at the same time so whole. I hope and pray for a man who loves me so completely and wholly… ‘Til death do us part.

When a cake releases from the pan- that “clunk” as it hits the platter waiting beneath never gets old.

The accomplishment that immediately follows a work out.

A phone call with one of my dearest friends. I can feel them smiling through the phone at me. Can hear her laughter bubbling up inside before the sound breaks.

Sitting around the family dinner table, hands joined, and united in prayer.

A book that keeps me flipping. Lost in another time & place.

Writing, blogging, inspiration.

The moonlight refelecting off the wooden floorboards, lighting my way. Don’t even have to turn a light on.

A rainy afternoon spent curled up with Mia in bed.

That unmistakable ‘plop’ when you top a dessert with a big dollop of freshly whipped cream.

A joke and a good laugh shared amongst coworkers. It so beats water-cooler talk.

Appreciation + Silky Fudge Sauce Recipe

Yesterday was Administrative Professionals Day!

Have you taken the time this week to thank those that make your life better? Easier? Richer? More fun? … Whoever that person is to you, thank them.


A simple thank you is a powerful thing.


I myself am a Coordinator and fall into that Administrative Professional bucket and I work with a remarkable group of women who work tirelessly each day, sometimes with very little thanks or recognition, to create a better work environment tomorrow than we had today or yesterday.


These ladies are detail-oriented and organized, always willing to lend a hand, extrememly helpful and complimentary, so selflessly giving of their time and talents, and I wanted to thank them. Honor them. Applaud them for what they do.


They truly are an inspiration to me.

So, from my heart, that means a food gift.


And not just any old food gift.





Hot. Fudge. Sauce.



This recipe was shared with my Mom from her good friend Margaret and it has been the go-to fudge sauce for our clan for a number of years now.Time to add it to your recipe boxes too!

So rich, thick, creamy, and chocolatey!


Make it for those you care for who ‘make life sweeter!’


Silky Hot Fudge Sauce Recipe:

{Each recipe yield 2 cups}


  • ½ cup butter
  • 1 (4oz) bar of Baker’s German Sweet Chocolate
  • 1 cup granulated sugar
  • 1 small (5oz) can evaporated milk
  • 1 tbsp light corn syrup
  • 1/8 tsp salt
  • 1.5 tsp vanilla extract


1. Melt butter and chocolate in a heavy saucepan over med-low heat. Once melted, stir in sugar, evaporated milk, corn syrup, and salt; cook over medium heat, stirring gently, for about 5 minutes or just until sugar is dissolved and sauce is perfectly smooth.

2. Remove pan from heat; stir in the vanilla.

3. Allow the pan to cool to room temperature. Allow the jar to come completely to room temperature before storing in the refrigerator.

4. Store the fudge sauce in the refrigerator for up to one month… if it lasts that long.

Once warmed, it is great drizzled over ice cream, pound cake, cheesecake, fruit, served alongside with cookies, brownies, or cupcakes, or even with just a simple spoon.
