Classic Pumpkin Bread

I always look so forward to pumpkin bread each fall.

It’s life’s little pleasures, you know?

Those moments you cherish.

Those memories you hope that you never forget.

Those remembered flavors.

It’s in the simplest of things, isn’t it?!?

Well, if you are a lover of classic spicy, sweet, & rich pumpkin bread, this is the recipe for you. Moist & tender, deliciously warm & spicy, and absolute crumbly perfection.

And another thing.

The aromas that escape your oven while baking are indescribable.

Classic Pumpkin Bread Recipe 

{recipe adapted from MyBakingAddiction.com, a wonderful food blog!}

Yields 2 loaves


  • 1 (15 ounce) can 100% pure pumpkin puree, not pumpkin pie filling
  • 4 eggs
  • 1 cup vegetable oil
  • 2/3 cup water
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups sugar
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons kosher salt
  • 2 tablespoons pumpkin pie spice*


1. Preheat oven to 350 degrees F. Grease and flour two 8.5 x 4 x 2.5 inch loaf pans. {Or you can be lazy & use the disposable foil pans like me!}

2. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, combine pumpkin puree, eggs, oil, water, vanilla and sugar until well blended.

3. In a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice until well combined.

4. Stir the dry ingredients into the pumpkin mixture until just blended. Pour batter into the prepared pans.

5. Bake in preheated oven for approximately 1 hour to 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean.

Turn out onto a wire cooling rack & allow to cool completely.

Then slice it up & serve.

A few things before you go…

This bread is a fantastic base for all sorts of other ingredients. Get inventive by added chopped, toasted nuts, chocolate chips (like I did in my 2nd batch), mashed bananas for Pumpkin Banana Nut bread, raisins, or dried cranberries.

Pumpkin Pie Spice


  • 3 tablespoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons nutmeg
  • 1 ½ teaspoons ground allspice
  • 1 ½ teaspoons ground cloves

Combine spices in a small bowl, mix well to combine. Store in a small jar or spice container.
