Herbs de Provence Roasted Potatoes

I love easy sides.

Isn’t the sides what truly makes the meal? I mean that grilled chicken or baked porkchop is all well and good, but Ohhhh! Those roasted potatoes were to die for!

How many times have you heard/said that before?

If you are like me, tons of times! I love a quick, easy, and unexplainably delicious roasted potato dish and these, these are great!

Herbs de Provence Roasted Potatoe Recipe:


  • 1 small bag of baby red potatoes or baby yukon golds {I have used both many times}
  • 2 garlic cloves, finely minced
  • 2 tablespoons olive oil
  • 1-1 1/2 tablespoons herbs de Provence* {I am a little heavy handed with this herb because I love it… feel free to scale back to 1 tablespoon if you like}
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


1. Preheat your oven to 400 degrees.

2. Wash, dry, and cut your potatoes either in 4 wedges or in half depending on size. Place in a large bowl and toss with olive oil, garlic, salt, and pepper until evenly coated. Then toss with herbs de Provence until everybody is covered with those delicious herbs.

*Herbs de Provence is an enticing mixture of fennel seed, basil, thyme, and lavender. So amazing good!



3. Place the potatoes in a prepared baking dish ready to roast!


I love baking in my stoneware. Always conducts heat so evenly and browns potatoes beautifully.


3. Slide into the oven and bake about 35-40 minutes or until potatoes are fork tender and nicely browned.


Serve warm with your favorite chicken, steak, salad, ice cream, whatever. It will round out any meal perfectly!
